  • ABSTRACT

This study investigated regional differences in the growth characteristics and nutritional composition of cultured single oysters (Crassostrea gigas) produced in three major regions (Namhae, Geoje, and Tongyeong) of Korea. Oyster samples were collected in December 2023. Oysters from Namhae exhibited significantly higher growth parameters, such as tissue weight, and total amino acid content compared to those from Geoje and Tongyeong. Furthermore, Namhae oysters showed higher protein and lipid content with polyunsaturated fatty acids, particularly eicosapentaenoic acid and docosahexaenoic acid. Alanine, glutamic acid, and proline were the predominant free amino acids across all regions, though their relative proportions varied by location. These findings demonstrate that regional environmental factors, such as water temperature and feed availability, significantly influence the growth, nutritional quality, and biochemical traits of cultured single oysters. Overall, this study provides valuable basic data for evaluating regional quality variations and developing targeted management strategies for high-quality single oyster production in Korea.
