Validation of analytical methods for vitamin determination and evaluationof the nutritional composition of five gastropod species

In this study, the proximate composition, including fat-soluble vitamins (retinol, tocopherol, and β-carotene) and water-soluble vitamins (vitamins B1, B2, and B3), was analyzed in five gastropod species. The accuracy and precision of the analytical method were evaluated using Standard Reference Material (SRM 1869). The method used to quantify fat-soluble and water-soluble vitamins demonstrated acceptable accuracy (z-scores) and precision in accordance with official validation guidelines. In addition, vitamin recovery rates ranged from 83.4% to 106.2%. Among the five species, Neptunea cumingii exhibited the highest retinol content (3.95±0.53 μg/100 g), and Tristichotrochus unicus showed the highest β-carotene content (336.82±0.97 μg/100 g). The highest α-tocopherol content was observed in Neptunea constricta (3.83±1.36 mg/100 g). For the water-soluble vitamins, the highest thiamin and nicotinic acid levels occurred in Fusinus perplexus (20.18±0.53 mg/100 g and 15.32±0.00 mg/100 g, respectively). The vitamin B2 content was the lowest in F. perplexus (0.08±0.00 mg/100 g), whereas the other four species showed similar levels, ranging from 0.21±0.00 to 0.35±0.02 mg/100 g. These results provide reliable analytical data on the fat-soluble and water-soluble vitamins in gastropod species.
